And this new cookbook, Vegan Indian Cooking, is really great! I know from experience that Indian cooking at first can seem a bit daunting because the list of ingredients can go on forever, but once you get a few basic staples it's really very simple. This book is well thought out and has a warm encouraging stand point and it would be a fantastic addition to any kitchen library

I really have a good time reading these book cause it shares me how great vegan diet is and how great are the benefits on following these guides and recipes. - Reviewed in the United States on June 16, 2016CAUTION to those who wish to eat completely vegan, some of these recipes contain ghee, which is clarified butter--you know, FROM COWS. You can easily substitute a good cooking oil without much structural difference, but the flavor will be a tiny bit less rich. If you don't mind a bit of dairy, then carry on.

There are no photos but this baby is cheap and there are loads of recipes from many different regions of India. If you pre-soak and cook your dry pulses and beans, you can whip up a meal in 30 min once you are used to the technique of curry making. (I keep batches in the freezer at all times). Red split lentils are your saviour when you are out of pre-soaked\cooked, you just need to rinse them in a colander and add them to your curry sauce. They cook in 20-30 min and thicken the sauce. The soaking step helps with digestion and makes the cooking time way shorter! Using canned beans is not needed if you are a little organised. Using the dried version is way cheaper and better for the planet. Enjoy!

I've only made the one recipe (Sweet Potato & Chickpea Masala), but based on this I feel this is the most poorly written and least edited cookbook I've ever used.
Let me explain. Total Time, 35min, Prep time 10min... if you add up the times in the directions you get 43-44min of total cooking time. It took me about 2hrs total, so I guess I'm really slow? there is a lot of measuring and chopping. I doubt even a professional chef could do it in the 10min described. Recipe calls for 1/2tsp cardamom seeds, directions mention cumin seeds. Well, which is it??? Ingredients list 4-5 curry leaves. What for? Never mentioned in the directions. Calls for 2 carrots. I guess chopped? Doesn't say. What does the direction to add "seasoning" mean? I assumed the salt and pepper? And the servings! This used my biggest saucepan and it's nearly full. Make 4 servings? Who are you feeding???
If the other recipes are this poorly written and requiring of interpretation I'll be throwing this book away.
